Lemon Pancakes and Croissants


Morning routine- wake up, share a pot of coffee, kiss good-bye, catch up on blogs and comments, breakfast, a new post on my blog, all before hitting the shower and stepping out the door. I've been trying not to miss breakfast in the mornings. If I do that I make poor choices for lunch because I'll want food instantly that makes me full just as fast. 

This mornings, lemon pancakes and croissants. Sounds like a lot of bread, huh? Well shoot, I'm tired of protein. Yesterday I was craving a chorizo burrito and had to make one for myself. I'm over meat right now. 

 If you've never heard of a Fresh and Easy it's a supermarket, if say Vons and Trade Joe's had a baby that would be it. Right now they are only located in California, Nevada, and Arizona. The pancakes come from a mix that I bought from there. This is the first time using the lemon mix, and found it quick, easy and muy delicioso. 


I found that the easiest way to make a consistent pancake is the cover it once you add the batter to the pan. Once the bubbles have popped and left air pockets on the edges it's time to flip the cakes. Leave them uncovered until bottom is golden and done. Voila, perfect pancakes every time. 


Maple syrup is fine and dandy, but I love berry syrups. Thank you Smucker's for making boysenberry syrup.


Last night I thought I wanted croissants in the morning. I buy them frozen and they need to set out over night to thaw and for the yeast to do it's business and grow. Since I committed last night I had to throw them in the oven this morning. I'm pretty full right now, but it sounds so good with ham and cheese for lunch. 



I love food but I hate spending time in the kitchen. Mixes and things that just heat up in the oven and microwave is the best thing for me. It doesn't mean that I don't know how to cook or bake, it's a time issue for me. I want my time to be spent with my love ones near and not in another room having fun with out me :)

  1. My sister is ALWAYS talking about Fresh and Easy. Maybe instead of Gig Harbor lobbying (hard) for a Trader Joe's we should be focusing on bringing Fresh and Easy to WA. Hmmm. . .

    Ha ha, she sounds like me trying to convert everyone I know to shop at Fresh and Easy. I love that I have one so near, it's my one stop for groceries.
    You might have some luck getting one near you, since they are spreading out from Ca on out.
